About this Bake
Rum babas are a great Neapolitan favourite, eaten for any and every occasion at any time of day. Made from a yeasted dough enriched with eggs and butter, they are soaked in a light rum and citrus syrup, which they absorb like a sponge. Try them with an espresso.
Top tip
The dough is quite liquid, making it hard to shape. Try using a piping bag.
