About this Bake

It is a traditional French gateau and I fell in love with th emoment I saw it and wanted to make it since then. Usually the choux buns are also covered with dry caramel for a posh glossy look.

Top tip

This gateau will benefit a lot from a good planning. You can make the puff pastry well in advance and keep it frozen. Make the white chocolate ganache a day before. The choux pastry buns, on the contrary, should be made right before filling and assembling because they easily absorb moisture and loos
