These Black Forest-inspired choux buns are a typical choux pastry filled with crème pat, dipped in dark chocolate ganache, and decorated with royal icing. The crème pat has vanilla and kirsch or brandy-soaked cherries mixed in.

Top tip

Use half whole milk and half heavy cream in the crème pat, as it thickens easier and is less temperamental. If you don’t have kirsch, brandy works to soak the dried cherries. Use a thermometer and aim for 200 degrees F when boiling the milk or cream for both the choux and the crème pat.
