About this Bake
This was a celebration cake for my guitar-obsessed uncle's 60th birthday. It's a lemon drizzle cake with raspberry jam and lemon curd, and a filling of mascarpone, fromage frais and fresh raspberries, covered in fondant. It took me two to three days.
Top tip
The baking was good, but I got into a whole world of pain when it came to layering on the buttercream and fondant. After some re-baking and restructuring, followed by final decoration, I got there in the end, and everyone loved the final result!
