About this Bake
Two basic 6oz sponges with a jam and buttercream centre (6oz flour/sugar/flora light, 3 eggs, 1tsp baking powder, Vanilla). Butterflies were made by colouring the icing and rolling the colours out together. You can alternate colours to give a more random look.
Top tip
Bake the sponges the night before decorating and wrap in cling film while still warm. This keeps sponges moist. If you don't fancy levelling off the tops place the cake upside down on a plate and wrap it. The weight of the sponge will flatten the uneven top.
