About this Bake
These melt-in-your-mouth almond cookies are filled with a peach-ginger jam and drizzled with almond royal icing.
Top tip
I used about 1/2 cup of pre-made peach jam and added about two tablespoons of fresh grated ginger and diced candied ginger. I set to simmer for a few minutes on the stove, just to infuse the ginger flavour.
