A lemon bundt cake with cranberry baked in. Decorated with a lemon royal icing and crystalized/candied lemon peel and cranberries.
Top tip
Don't be afraid to break tradition. I made this cake for Thanksgiving in America. While pie is the traditional dessert (and I made 2 pies as well) this dessert was the showstopper. When the lid came off the cake carrier there were gasps of surprise and excitement and elation over a beautiful cake.
