A moist chocolate island cake coated in ganache with homemade cake moss, a chocolate tree, chocolate pebbles, blue jelly ocean and smooth biscuit crumbs for the beach.

Top tip

To ensure the jelly mix doesn't melt your ganache and cloud the jelly, add the room temperature jelly mix in layers. The first being a thin 1cm layer, and thereafter 2in, letting it set in the fridge for a few hours after each layer.
