About this Bake
This is my style of carrot cake. I used rapeseed oil, cinnamon, cardamom, ginger, cloves, nutmeg and cream cheese frosting.
Top tip
Ensure all ingredients are at room temperature and weigh the carrots after coarsely grating. If the carrots are very "wet" after grating, place them in a colander over a bowl until ready to use. Roast the pecans before using.
