About this Bake

The cake is a vanilla bean coconut sponge heavily soaked with tres leches mix (condensed milk, evaporated milk and heavy cream). The layers are filled and frosted with a coconut Chantilly cream and candied shredded coconut.

Top tip

Use room temperature coconut oil instead of butter in the cake for a pronounced coconut flavour.
