About this Bake
It’s my own take on a summery classic. A triple-layered blueberry, lemon and almond cake sandwiched with homemade lemon curd and buttercream, and topped with Swiss meringue buttercream, blueberries and thyme flowers.
I substituted some flour in my normal cake recipe for ground almonds to add a little bit of a twist on a more classic summery cake. My top tip when using ground almonds is to also add a little bit of honey so that the consistency of the bake isn’t too coarse!
