About this Bake
A carrot cake made with coconut, pistachios and orange and topped with cream cheese icing, that was piped into flowers (that may have been made in excess and resulted in a whole bowl of extra icing!). A perfect cake for my mum's birthday!
Top tip
To ensure your cake is not dry, take it out of the oven when there are moist crumbs on the skewer!
