About this Bake
A normal sponge cake with lemon and white chocolate buttercream. Topped with mango pieces, blueberries and toasted coconut. Finished with chocolate shards around the edge.
Top tip
Whip the butter and sugar really well before adding the flour and eggs. This makes it extra light and fluffy.
