About this Bake
I attempted Mary Berry's Bakewell tart, with an almond feathered icing layer. The tart has an enriched sweet shortcrust case, with a layer of raspberry jam, followed by a Frangipane baked layer and topped with almond icing. The total bake time was around 3-3.5 hours and I enjoyed every minute of it.
Top tip
The recipe suggests rolling out the dough straight away after making, this makes it much harder to roll out to a good thickness (around 2mm) before lining the fluted tart tin and chilling. I'd recommend 15 mins in the freezer first and 15 mins more in the freezer once lined.
