It's a sculpted dairy-free madeira cake for a friend's daughter's birthday tomorrow. Hope she likes it.
Top tip
Use a strip of foil around the cake tin to distribute heat evenly. The makes the cake not rise too much so you don't have to cut much of a dome off.
