These gluten-free key lime pies have home-made crushed ginger stem biscuits lining the base, with a lemon,lime and ginger infused filling. Served with summer fruits and a raspberry coulis they are perfect for celiacs and non-suffers alike!

Top tip

When cooking gluten-free never use teflon pans (e.g. melting butter for the pies) that have once been contaminated with gluten! They will never be completely gluten-free so it's worth investing in some new equipment!
