About this Bake

This was the first recipe I've tried from the website. It was well written with enough information for a beginner to make something very complicated! The only mistake I made was that I burnt my only bag of slivered almonds and so used ground almonds instead, which is not visually appealing.

Top tip

The double cream was difficult to work with, but I'd already committed to the recipe. I would not do it again with a hand mixer. Make sure your chocolate mousse is very level before setting, and slightly oversize, then trim your joconde so the edges fit to the end of the mousse.
