About this Bake

I made Prue Leith's delicious Le Gâteau Vert for my husband's 65th birthday. I didn't know where to get edible flowers in the middle of winter in Canada, so I purchased sugar paste flowers and made leaves out of the leftover pistachio marzipan.

Top tip

For best results, use raw pistachios. Also, whisk the eggs and sugar in a bowl over a pot of hot water until the mixture reaches 40 degrees, then remove from the pot and continue whisking until the mixture gets to the ribbon stage.
