About this Bake
This was a welcome home cake for a premature little boy coming home from hospital! It was vanilla sponge with blue buttercream, raspberry jam and meringue clouds! I loved making this cake and the reactions it got.
Top tip
If meringues seem like they are beginning to brown when you want them to stay white, turn the oven off and leave them to finish baking in the cooling oven to prevent them from getting too dark! If this fails, there’s always icing sugar to cover the sins.
