About this Bake
For a 11 year old boy obsessed with London trains so his father asked me to make a London underground train for him. Madeira sponge cake with jam and cream filling. Coated with chocolate ganache and covered with icing to decorate. Platform made of rice cakes and icing covered.

Pre-do cake toppers well in advance, to dry completely.
