About this Bake

This is a lemon and blueberry vanilla cheesecake. The citrus taste works well in a cheesecake as it cuts through the sweetness and richness from the high fat content. I also drizzled melted white chocolate over the top and decorated with berries.

Top tip

Be very careful not to overwhip the double cream when making a cheesecake as it will curdle and not set in the fridge. To avoid the cheesecake mixture being ruined by curdled double cream, I always whisk the cream separately and then softly combine to incorporate with the rest of the ingredients.
