About this Bake
I am a traditional mole catcher and I made this cake, a German mole cake, for my 60th birthday, which happens to be International Mole Day. The mole hill is filled with layers of cream, bananas and raspberries then covered with chocolate cake crumb.
Top tip
Make sure you practice making the actual mole before assembling the cake. Extra chocolate crumb may be needed to cover the filling and be sure to put the cake in the fridge for long enough before serving in order for it to firm up before slicing.
