About this Bake
This is a chocolate sponge, a whipped cream chocolate with maple bourbon, and a chocolate ganache bark, decorated with sugared cranberries and rosemary and maple-glazed pecans. I dusted with cocoa and confectioners' sugar just before serving.
Top tip
I used the ganache in layers as it firmed up: a crumb layer (30 minutes with the cake in the fridge), a second layer (15 minutes with the cake in the fridge), then a final layer (and another 10 minutes in the fridge) before pulling the angled spatula through to make the bark design.
