Not only are these edible snack-cessory sunglasses fun to look at, but they’re delicious to eat with perfectly melt in the mouth sable biscuit, boiled sweet lenses and royal icing decoration.

Method

Step 1
Preheat the oven to 180°C/160°C fan/350°F/Gas 4. Line a baking sheet with baking paper.

Step 2
For the sable biscuit, cream together the butter and sugar until pale and fluffy. Add a few drops of pink gel food colouring and mix to an even colour. Sift in the flour and bring the dough together.

Step 3
Tip the dough onto the work surface and lightly knead into a smooth dough.

Step 4
Place the dough between 2 pieces of baking paper and roll out to 3mm thick. Rest in the fridge for 20 mins.

Step 5
Remove the dough from the fridge, then cut out 12 heart shapes using the large heart cutter. Use the small heart cutter to remove the middle from all 12 hearts.

Step 6
Carefully arrange the hearts in six pairs on the lined baking sheet, ready to be joined as glasses.

Step 7
Use the remaining dough to cut out six small rectangles which will form the bridge of the glasses. Place a rectangle between each pair of hearts, lightly press to seal and join them together. Chill for 20 minutes in the fridge.

Step 8
Place the clear boiled sweets into a sandwich bag and crush with a rolling pin.

Step 9
Remove the biscuits from the fridge and fill the centre of each heart shape with a spoonful of the crushed sweets.

Step 10
Bake for 7-9 minutes, until the crushed boiled sweets have melted and the edges of the biscuit have an even, pale colour.

Step 11
Keeping the biscuits on the baking paper, transfer from the baking sheet to a cooling rack and leave to cool completely.

Step 12
For the royal icing, whisk together the large egg white and icing sugar until you have a smooth, stiff, piping consistency. Transfer to a piping bag fitted with a No.2 writing nozzle and set aside.

Step 13
To assemble, sprinkle a spoonful of hundreds and thousands on the ‘glass’ lenses of three pairs of the glasses, then pipe royal icing around these biscuit ‘frames’. Place one of the three remaining pairs of glasses on top of each of these, sandwiching with the royal icing to create three pairs of sandwich glasses.

Step 14
Finish by piping with decorative dots of royal icing in the corners of each pair of glasses.
