About this Bake
This is inspired by my grandmother's rice pudding made with pistachios and cardamom. I took the black seeds out the pods, ground them and put them in the cake mixture as well as the icing.
Top tip
Add a couple of drops of vanilla essence to the mascarpone icing, makes it taste like ice cream!
