About this Bake

This cake was decorated to honour New Jersey’s state fruit: the blueberry. It was a fresh ricotta cake with almond cream, almond buttercream and fondant 'blueberries'. The cake was made using my own recipe and a homemade almond cream filling.

Top tip

I always have almond flour on hand. Aside from baking with it, I use it to make my own homemade almond paste, almond cream and even marzipan.
