About this Bake
My annual Yule Log. Chocolate genoise sponge, raspberry curd, Irish cream mascarpone filling, chocolate swiss meringue buttercream and meringue mushrooms.
Top tip
Roll the sponge when hot, and cool rolled to prevent cracking. Use a thin layer of fillings so it rolls nicely. When my chocolate seized I was able to add cream to save it.
