About this Bake
My boyfriend and I grew the courgettes on our allotment and, with an excess crop, he set me the challenge of making as many things as I could with them. This is a lime and courgette cake with a lime drizzle and lime zest, cream cheese icing.
Top tip
Squeeze all the water from the grated courgettes to ensure the mixture isn’t too wet.
