About this Bake
I used lemon curd as I realised after I started making it that I didn't have any jam. It worked a treat, complementing the richness of the almond filling.
Top tip
Blind bake for 15 minutes, then cover the base in egg white and bake for a further 2-3 minutes to protect against a soggy bottom! Boost the almond flavour with a cap full of almond essence/extract.
