About this Bake
This was a cake my daughter requested for her 6th birthday. It is six layers of sponge with vanilla buttercream between the layers. It is iced with clouds of whipped cream frosting, which is gelatine-stabilised. It is free from gluten so the whole family could have some.
Top tip
Make sure to weigh the batter for each layer to ensure even layers and watch the baking time because the thin layers will overcook quickly. I would not advise whipped cream frosting between the layers, as the whipped cream is not strong enough to support the weight of the sponge layers.
