About this Bake
This is a fruit cake with marzipan and icing. I made it for my husband Mike's 50th birthday, as his favourite places are the Lake District and the Yorkshire Dales.
Top tip
Always put a couple of tablespoons of warm water into a Victoria sponge mix to make it lighter.
