About this Bake
This was a special cake for two sisters who share a birthday party every year. They wanted to be mernaids! The top tier is Madeira sponge with strawberry jam and mascarpone filling covered in white chocolate gauche. The bottom tier is dark chocolate fudge cake with chocolate praline filling.
Top tip
For edible sand you can't beat a digestive biscuit crumb! Make sure it's the last thing you add to the cake otherwise you will be battling crumbs at every turn!!
