About this Bake
Like most people, we’re obsessed with our dog. Inspired by the kawaii cakes of Japanese Week, we decided to (temporarily) immortalise her in cake form. The sponge is four alternating layers of matcha and lemon/lime (for a yuzu vibe), sandwiched with vanilla buttercream. The whole thing is vegan.
Top tip
Add a layer of marzipan under the fondant, and use extra scraps of marzipan to fill in any uneven bits on the top of the cake first to flatten it out.
