About this Bake
This is a lemon and raspberry stargazer cake made for an 80th birthday. The cake is made from lemon Italian meringue buttercream, vanilla sponge with a lemon simple syrup and raspberry jam. The sponge layers were three shades of pink.
Top tip
Freeze the sponges to seal in freshness and help assembly. The stargazer lily is hand made with gum paste and decorated using edible/food safe dust.
