About this Bake
The citrus peel was drowned in mango and pineapple spiced rum, and the leftover rum was used to make a sugar syrup afterwards to brush over the cake.
Top tip
Don't panic if the dough doesn't look like it's doing too much 3/4 of the way through the first proving; this one took its time.
