About this Bake
This was a wedding party cake for a good friend who got married in St Lucia this year. They wanted a Caribbean theme with a chocolate and rum bottom tier and a Jamaican ginger cake on the top. Loved making this!
Top tip
Always use sugar syrup on your sponge cakes. It helps keep the sponges beautifully moist and tastes delicious.
