I did not have the prerequisite 9" springform pan so improvised with a parchment paper wall to prevent overflow.
Top tip
Allow all ingredients to warm to room temperature before combining and definitely use a water bath when baking. It is done when there is still a wobble in the middle. This will firm up as it cools. Do not prick the surface to check. Cool for an hour before refrigerating - I chilled mine overnight.
