About this Bake

This was a pistachio, cardamom & lemon drizzle cake. I've been experimenting with flavours over lockdown. This was a light cake with a nice crumb and texture. The mix of lemon, pistachio and cardamom created a sensation of tastes in the mouth. Overall, it was a perfect cake.

Top tip

Don’t overmix, add the eggs slowly and don't overcook. It should be golden on top.
