This is a Mary Berry recipe and was featured as a technical challenge in The Great British Bake Off (Series 6).
Top tip
The hardest part is the boiled icing. It can be difficult to get the meringue smooth and not granular. I recommend beating the egg whites, cream of tartar and sugar over a pan of boiling water to achieve optimal smoothness.
