This is my version of the ever-popular millionaire’s shortbread, and this is my attempt to elevate this recipe from a humble traybake to an elegant form worthy of its name.

Top tip

Completely chill the assembled biscuits before dipping in the chocolate coating (a mix of melted chocolate and coconut oil).
