About this Bake
These were cupcakes to go with the Mermaid Birthday Cake for my daughter's 11th Birthday. They were a vanilla sponge with a pink lemonade buttercream icing.
Top tip
When making buttercream icing, only use some of the butter first. You can always add more if it's too thick.
