About this Bake
I made this for my nephew's 2nd birthday. He has an obsession with vans, so I thought this would be perfect. I was going to just decorate a flat traybake, but I thought I'd challenge myself! Van is madiera sponge, for structure, 'road' is normal traybake sponge.
Top tip
Instead of using jam to stick the icing to the cake, I tend to mix butter and icing sugar togther. It doesn't soak into the sponge as much and is much less messy than jam.
