About this Bake
This was the wedding cake I made for myself and my husband. A Victoria sponge with grated lemon zest added to the cake mixture; fresh raspberry buttercream to sandwich and coat each cake; decorated with white chocolate cigarellos, fresh raspberries and blueberries, with a light dusting of raspberry
Top tip
For the fresh raspberry buttercream add the pureed raspberry in stages, a little at a time, to prevent curdling. However, if curdling does occur you can bring it back by beating in some cooled, melted white chocolate (about 100g chocolate per 500g buttercream).
