If you follow the steps exactly as described Paul Hollywood’s recipe works out perfectly. No soggy bottom, held its shape and not dry. I used store bought filo pastry rather than making my own warka.
Top tip
Layering squares gives you ample dough to pile in the middle and cover up the filling.
