About this Bake
My daughter's had an excellent parent's evening so I baked these mini Victoria sponges as a treat. I have filled them with clotted cream and homemade strawberry jam . Topped off with fresh strawberries and yellow iced fondant butterflies .
Top tip
Ensure your oven is not too hot and that you use a well greased tin, dusted with plain flour.
