This is a gluten-free sponge because of Katie's intolerance. She loved her cake.
Top tip
Planning and draw out your design. Hot water into the mix just before putting into the tins for baking, about the equivalent amount of a large egg. Also a couple of table spoons of boiling water into the butter icing fabulously light.
