These easy and adaptable flatbreads make a great accompaniment to many meals. Roasting the grapes caramelises the sugars and intensifies the flavour, complementing the salty blue cheese beautifully. Get creative by choosing your favourite flavours to change up the fillings, or even keep them plain and brush with a garlic butter once cooked.

Step 1

For the filling, heat the oven to 220°C/200°C fan/425°F/Gas 7. Spoon the honey and olive oil into a medium size bowl and mix well together. Add the bunch of grapes and swirl them around in the honey mixture to coat.

Step 2

Place the grapes on a baking tray and spoon over any remaining honey mixture. Roast in the oven for 20 minutes, then remove from the oven and set aside to cool completely. Reduce the oven to 120°C/100°C fan/250°F/Gas ¼.

Step 3

For the dough, tip the flour into the bowl of a stand mixer fitted with a dough hook. Add the salt and yeast. Add the olive oil and water then mix on low–medium to combine. Scrape down the insides of the bowl and continue to mix for 5 minutes on medium speed or until silky smooth and elastic and the dough pulls away from the sides of the bowl.

Step 4

Cover the bowl with a clean tea towel and leave to rest for 15 minutes.

Step 5

Divide the dough into 8 equal pieces. Working with one piece of dough at a time, using your fingertips shape the dough into an approx. 12cm circle. Place one eighth of the crumbled blue cheese in the centre of the dough and top with 5 of the roasted grapes, sliced.

Step 6

Gather the edges of the dough up and over the filling and pinch together to seal. Turn over (so the join is underneath) and place on a lightly floured surface. Roll out to an approx. 23cm circle.

Step 7

Heat a little olive oil in a large frying pan over a medium high heat. Add the circle of dough and cook for 90 seconds until puffed up, bubbling and golden-brown underneath. Turn the flatbread over and cook for a further 90 seconds until the blue cheese has melted and the flat bread is cooked through.

Step 8

Place the flat bread on a baking sheet lined with non-stick baking paper and keep warm in the oven. Repeat with the remaining dough until you have 8 flatbreads, working on the next flatbread while each one is cooking. If you have more than one hob and pan available, you could fry a couple of flatbreads at a time.
