Step 1

Tip the butter into a heatproof bowl, heat in the microwave for 30–45 seconds, until the butter has melted.

Step 2

Stir the light brown sugar, double cream, vanilla extract and a good pinch of sea salt into the melted butter. Heat on high for 1 minute.

Step 3

Stir and return the bowl to the microwave for a further 30 seconds, until the caramel is completely smooth and the sugar has dissolved. Don’t be tempted to overcook the caramel if it looks too thin as it will crystallise.

Step 4

Carefully pour the hot caramel into a sterilised jar. The caramel will thicken as it cools.
