Method
Step 1
Rub the pumpkin with a little oil and sprinkle with cinnamon to taste.
Step 2
Heat your oven to 200°C/Fan 180°C/400°F/Gas 6.
Step 3
Spread the pumpkin on the baking tray and roast for 20-30 minutes or until soft. Cover with foil if needed to avoid the edges burning.
Step 4
Cool slightly, then transfer to the food processor and blend until smooth.
Step 5
Use in your recipe immediately, or transfer to a sealed container and freeze to use another day.
